Frequently Asked Questions
When interested in bulk beef, it’s important to familiarize yourself with the terminology associated with the process.
Live Weight – the actual weight of the steer when we take the animal to the processing facility
Carcass Weight – the animal’s weight after all material is removed and ready to dry age for 14+ days.
Bulk beef is sold on carcass weight and is a flat rate per pound. This rate is determined by market price at time of purchase.
Carcass Weight x Market Price Per Pound = Buyer Total
The processing facility charges a processing fee, but Flying C Ranch covers this fee for the buyer.
The average live weight of our steers is 1,200 to 1,500 pounds. The average carcass weight is 800 pounds. A half steer would average 400 pounds.
